Born in Mexico, Chef Emilio Noselotl's love of cooking began at an early age with the help of his grandfather, a local butcher and his grandmother, an excellent Mexican cook. His passion led him to the University of Puebla where he pursued his dream of perfecting the art of French cuisine. With hard work and determination. Noselotl soon began working at some of Southern California’s finest restaurants, including Entourage in Los Angeles, Royer’s in Marina Del Rey, and Geoffrey’s in Malibu. He was soon drawn to the glamorous lifestyle of Hollywood and with hard work and determination moved on to face the greater challenge of taking on an entire hotel. Chef Emilio first started working at Le Montrose and soon after the Mondrian.
Never wanting to pass up an offer he found himself taking an even larger responsibility; while still holding his position as Executive Chef at the Marriott, he opened a restaurant in a Sheraton in Garden Grove and one in a Hilton in Glendale. After all these undertakings, Chef Emilio missed the intimacy and quality of boutique hotels. It is with the same fortitude that he began with, that he now comes back to Hollywood to completely transform the Chamberlain and pursue his passion by creating unique, quality dishes that, like himself, are ever changing. He strongly believes in putting the satisfaction of the customer first by offering options such as vegan, low- carb and gluten free. This effort- combined with the freshest ingredients, and the newest trends in fusion cooking- leada to a truly exceptional dining experience.
